Chalcones represent an important group of natural or synthetic compounds with an array of biological activities. They are intermediates in biosynthesis of flavonoids. Chalcones are abundant in commonly consumed fruits and vegetables such as apples, pears, strawberry, bearberry and tomatoes respectively. In addition, they also occur in wheat and wheat products. The most common chalcones that occur in these fruits and vegetables include phloretin, phloridzin, chalconaringenin and arbutin.

Chalcones play an important role in a number of biological activities1. For example, they show significant activity towards variety of tumours and display chemoprotective properties. This can be attributed to their antioxidant properties. Among other important properties, chalcones inhibit bacterial growth and posses antifungal and anti viral properties. Furthermore, they have anti-inflammatory and capillary strengthening properties. Hence, chalcones may provide novel therapeutic approach in treatment of inflammatory disorders. In addition, some chalcones also exhibit insulin like activities, which imparts them with anti-diabetic properties. For example, methyl hydroxy chalcone (MHCP) derived from cinnamon; a frequently consumed spice has shown to reduce the progression and complications of diabetes2.

Finally, widespread availability and therapeutic potential of these compounds motivated us to enhance their native value by functionalizing them with safe and biocompatible molecules. These functionalized chalcones are expected to have increased solubility and bioavailability along with controlled release profiles.
